Here are some recipes that I like! They were Frankensteined together from a bunch of different online recipes, which technically counts as me inventing them. I hope you enjoy!
INGREDIENCE: two boxes ziti noodles, two bags shredded mozzarella, one bag shredded parm,
3 eggs, 1 1/2 cups ricotta, half a white onion, four green onions, two cans crushed tomatoes,
six ounces tomato paste, red pepper flakes, italian seasoning, and whatever vegetables your heart desires (i like red peppers, zucchini, and mushrooms!)
1. preheat oven to 350, make two boxes of ziti noodles
2. chop up half a white onion and about four green onions, saute them in olive oil until they get clear. chop up the other veggies and toss em in there too.
3. in the same pan, put in 6oz tomato paste (the smallest cans they sell) and two cans crushed tomatoes.
add red pepper flakes and italian seasonings (oregano, parsley, etc). cook on medium until its a good sauce consistency
4. in a bowl, mix together 3 eggs, 1 1/2 cups ricotta, a bag of shredded mozzarella, and half a bag of shredded parmesan>
5. get a big ol lasagna pan and spread a little of the homemade sauce on the bottom. then put about half the ziti in there
6. top that ziti w the ricotta mixture, then most of the sauce (leave about a cup)
7. put the rest of the ziti over that, then the last cup of the sauce, then top with a thick layer of shredded mozzarella and parmesan
8. put it in the oven for 25 minutes and you got yourself a delicious meal!
LAURA'S NOTES: this is my go-to for big parties! you can put so many good veggies in here and it's really easy to make a shit ton of this and some garlic bread for a delicious time.
INGREDIENCE: half an onion, red bell pepper, mushrooms, adobo seasoning, chili powder,
paprika, cumin, 3/4 cup uncooked rice, can of black beans, 1/2 cup of vegetable broth
1. chop half an onion and in a saucepan saute in oil until transparent
2. while its sauteeing, chop red bell pepper and mushrooms and toss those bad boys in there
3. add seasoning and follow your heart for the amounts
4. saute until the juice from the veggies has started to thicken in the pan
5. add uncooked rice and stir
6. add black beans (undrained) and vegetable broth
7. bring it all to a rolling boil, then reduce heat to low
8. cover saucepan and let simmer for 25 minutes
9. stir and enjoy! best enjoyed with sour cream and shredded cheese on top ^_^
LAURA'S NOTES: this is a good one for when you need a big hearty meal but you don't have a lot of time or energy!
